  • 1 pound catfish fillets, cut into 1-inch pieces
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (more to taste)
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon Cajun or Creole seasoning
  • Salt and freshly ground black pepper, to taste
  • Vegetable oil, for frying
  • Lemon wedges, for serving
  • Tartar sauce or remoulade sauce, for dipping

Instructions:

  1. Preparing the Catfish: Cut the catfish fillets into 1-inch pieces, making sure they are uniform in size for even cooking.
  2. Marinating the Fish: In a medium bowl, mix the buttermilk and hot sauce. Add the catfish pieces and toss to coat. Let them marinate for 10-15 minutes, allowing the flavors to infuse.
  3. Mixing the Dry Ingredients: In a shallow dish, whisk together the cornmeal, flour, Cajun or Creole seasoning, salt, and black pepper. This mixture will add a wonderful texture and rich flavor to the poppers.
  4. Heating the Oil: Fill a deep skillet or deep fryer with enough vegetable oil to submerge the catfish pieces. Heat the oil to 350°F.
  5. Coating and Frying: Take the catfish pieces out of the buttermilk mixture and dredge them in the cornmeal mixture, pressing firmly to ensure a good coating.
